Holiday Mashed Potatoes

Unfortunately, the directions  for making my mashed potatoes are a little vague, however your taste buds will know when you have the proportions correct.

Ingredients

  • Russet potatoes (one per person, plus one or two for the pot)
  • Salt
  • Pepper
  • Milk (not much)
  • Butter (plenty of butter)

Directions

Cut up and boil potatoes until soft (about twenty to thirty minutes.)

Drain well (dry potatoes make better mashed potatoes).

Add  milk (This is just enough to help smooth things out. I probably don’t use a quarter cup when I make a batch with 20 potatoes.)

Butter, yes (for a 20 potato batch I will us between a pound to a pound and a half.  Again this is to taste and it appears I get my most compliments the more butter I use.)

Whip with hand mixer until smooth.

Salt and Pepper to taste.
