Salmon Patties

Salmon Patties have become a real family favorite.  There is one ingredient that may surprise you, but it is the one that adds that little extra. If you have people with any kind of appetite at all double the batch and make bigger patties.

Ingredients

  • 1 small can of skinless/boneless Pink Salmon, drained
  • 1/4 cup dry bread crumbs (I usually substitute cracker crumbs here and Iam pretty heavy handed with the amount)
  • 1/4 cup chopped onion
  • 1 teaspoon lemon juice
  • 1 teaspoon parsley flakes
  • 1/8 teaspoon garlic salt
  • 1 large egg, beaten
  • 2 tablespoons mayonnaise (you could use salad dressing, but to me it always tastes better with mayo)
  • Oil

Directions

In a medium bowl combine salmon, bread crumbs or crackers, onion, mayo, egg, lemon juice, parsley, and garlic salt, mixing well.

Shape into 4 burgers.  They will be kind of wet and a bit small for me (double the recipe).

Heat 1 to 2 tablespoons of oil, in a large skillet, over medium heat.

Cook until browned on each side.  It will take about 3 to 4 minutes per side.

These can be served on buns or just on the plate with a sauce or plain.
